Fried Rice

Can't go wrong with fried rice.

  • Essentials
  • Overnight Rice (see notes below)
  • Shallots/Onions (diced, see notes below)
  • Garlic (2-3, minced)
  • Green Onion (sliced)
  • Frozen Vegetables (diced, see notes below)
  • Eggs
  • Meat (see notes below)
  • Soy Sauce
  • Oyster Sauce
  • Salt/pepper (to taste)
  • Optional
  • Sriracha Sauce (see notes below)
  • Chili Peppers (sliced)
  • Ginger (minced)

  • Instructions

    1. Prepare all ingredients before beginning (mise en place).

    2. Heat oil in a wok (or pan) on medium high heat until slightly smoking.

    3. Fry shallots/onions in pan stirring frequently to prevent burning for ~20 seconds.

    4. Turn heat to high and fry meat until browned. Add salt/pepper to season the meat.

    5. Stir in rice and frozen vegetables, breaking up clumps of rice. Cook for a few minutes.

    6. Push everything to one side and add the eggs. Wait for egg to cook and then scramble it.

    7. Add soy sauce (around the edge) and oyster sauce and mix everything together thoroughly.

    8. Turn heat down to low and check for seasoning by taste testing. Add salt/pepper to correct seasoning.

    9. Turn heat off and mix in the green onions.


    Notes


    General

    Remember that these ingredients are just general guidelines for what I usually put in fried rice. The ingredients can be changed as you please, but rice is absolutely required!

    Overnight rice is essential because the overnight cooling process allows the grains to separate so they will not be mushy or stuck together when cooking. If you forget to make your rice overnight, you can still make the rice and place it in the fridge for a few hours.


    Shallots or Onions

    Use whatever you have at your disposal. However, shallots are recommended for this recipe because they cook much faster and are easier to cut.


    Choice of Meat

    • Ground Beef
    • Hot Dog Sausage (sliced)
    • Luncheon Meat (diced)
    • Chicken Breast (bite-sized pieces)
    • Chicken Thighs (bite-sized pieces)

    Choice of meat will depend on the sauces that you want to pair with the fried rice. For instance, salty meats like luncheon meat and hot dog sausage will go better with a sweet sauce (e.g. sweet thai chili sauce) because it balances the saltiness. Feel free to choose other meat besides those suggested or do not add meat at all for a vegetarian fried rice.


    Frozen Vegetables

    • Diced Carrot
    • Corn
    • Green Beans
    • Green Peas

    Use whatever vegetables you would like and you could even use fresh vegetables, although I prefer frozen vegetables because they are precut and cheaper than fresh.
